Moroccan briwat


Have the best of both worlds with these little sweet and savoury pastries.

  • 250g Minced meat – lamb or beef
  • Warqa or filo pastry sheets
  • 4 tblspn butter + melted butter for brushing pastries
  • Olive oil and sunflower oil
  • 1 beaten egg
  • 1 onion chopped
  • generous handful parsley and coriander
  • 1/2 tsp paprika
  • 1/4 tsp ginger
  • 1/4 tsp cumin
  • 2 garlic cloves crushed
  • pinch cinnamon
  • pinch icing sugar
  • salt/pepper
  1. Fry onion in 4 tblspn butter, olive oil and sunflower oil (it may seem excessive, but results in the tastiest filling!)
  2. Add mince meat and brown
  3. Add garlic, herbs and spices and fry for a few minutes
  4. Add beaten egg and mix for 2 mins
  5. Adjust seasoning if neccessary and set aside
  6. Meanwhile, brush cut filo pastry sheets into long strips and brush with melted butter. Add the filling and fold into either spring roll or samosa shapes
  7. Seal with melted butter and either deep fry or bake in the oven until they are golden


  • Add harissa or chilli flakes for a spicy alternative
  • Prawns and vermicelli
  • Chopped olives
  • Cheese and apricots
  • Chopped nuts
